No-Bake Low Carb Energy Balls

Now I appreciate that these energy balls are not the most photogenic of snacks! (I won't tell you how my husband described them! ) However, they are easy to make, super tasty, gluten free, and full of good fats to fill you up rather than reaching for the carbs!

  • 1 and 1/2 cups of almonds

  • 1/2 cup of desiccated coconut

  • 1/3 cup of golden flaxseed

  • 1/4 tsp of salt

  • 2/3 cup of unsweetened peanut butter

  • 1 tsp vanilla extract

  • 1/2 cup of 70% cocoa chocolate of chocolate chips

  • Optional - 1/3 cup of maple syrup (I didn't use this as I wanted to keep the sugar content to a minimum)

  1. Place half the almonds in a food processor and pulse until you have a rough almond flour. Crush or chop the remaining almonds into small pieces to add texture and add to the almond flour.

  2. Add the coconut, flaxseed and salt and mix together.

  3. Add the peanut butter, vanilla extract and maple syrup, if using, and mix together until just combined. If the peanut butter isn't runny and makes the mixture too stiff, trying heating it slightly in the microwave.

  4. If using a bar of chocolate, cut into small chunks. Add the chocolate to the mixture and fold in.

  5. Line a baking tray with parchment and using your hands form the mixture into 1" balls and place on the paper.

  6. The can be eaten straight away but are best if put in the fridge for 10 mins or so to firm up.

This mixture makes approximately 30 servings.
