I discovered this delicious peanut salad while visiting Kerala. It has a lovely fresh taste with a hint of spice as well as lots of protein which makes it a winner in my book! I haven't quite managed to capture the intensity of the flavours but maybe that's because I'm eating it in my garden and not on a balcony overlooking the Indian Ocean!
I couldn't manage to find raw peanuts, so I just used normal salted peanuts and didn't add salt to the recipe and it seemed to work just as well.
Ingredients
1 cup of peanuts
1 cup of cucumber, diced
3 salad tomatoes, diced
I small red onion, diced
2 tbsp mint, finely chopped
2 tbsp coriander, finely chopped
Juice of half a lemon
1/4 tsp red chilli powder
1 tsp of chaat masala
Salt and pepper to taste
Method
Chop all the veggies removing any skin, seeds, stems as needed.
Add all ingredients into a mixing bowl and toss until all ingredients are well mixed.
Refrigerate for 15 mins before serving to allow the flavours to be well incorporated.
Serve with poppadoms or flatbreads.
