Indian Peanut Salad



I discovered this delicious peanut salad while visiting Kerala. It has a lovely fresh taste with a hint of spice as well as lots of protein which makes it a winner in my book! I haven't quite managed to capture the intensity of the flavours but maybe that's because I'm eating it in my garden and not on a balcony overlooking the Indian Ocean!


I couldn't manage to find raw peanuts, so I just used normal salted peanuts and didn't add salt to the recipe and it seemed to work just as well.


Ingredients

  • 1 cup of peanuts

  • 1 cup of cucumber, diced

  • 3 salad tomatoes, diced

  • I small red onion, diced

  • 2 tbsp mint, finely chopped

  • 2 tbsp coriander, finely chopped

  • Juice of half a lemon

  • 1/4 tsp red chilli powder

  • 1 tsp of chaat masala

  • Salt and pepper to taste

Method

  1. Chop all the veggies removing any skin, seeds, stems as needed.

  2. Add all ingredients into a mixing bowl and toss until all ingredients are well mixed.

  3. Refrigerate for 15 mins before serving to allow the flavours to be well incorporated.

  4. Serve with poppadoms or flatbreads.
