Protein-packed Chickpea & Feta Salad

  • 3 tbsp extra virgin olive oil

  • 3 tbsp lemon juice

  • 1 garlic clove pressed or minced

  • 1/2 tsp salt

  • Black pepper to taste

  • 200g cups of salad tomatoes

  • 1 half a cucumber, sliced and halved

  • A can of chickpeas

  • 1/2 medium red onion thinly sliced

  • 1 avocado

  • A handful of chopped coriander

  • 130g feta cheese

  1. Combine the olive oil, lemon juice, garlic and seasoning in a bowl and whisk together to make the dressing.

  2. Combine the remaining ingredients in a salad bowl, add the dressing to taste and toss to coat.

Serves 6 as a side salad
