Protein-packed Chickpea & Feta Salad
3 tbsp extra virgin olive oil
3 tbsp lemon juice
1 garlic clove pressed or minced
1/2 tsp salt
Black pepper to taste
200g cups of salad tomatoes
1 half a cucumber, sliced and halved
A can of chickpeas
1/2 medium red onion thinly sliced
A handful of chopped coriander
130g feta cheese
Combine the olive oil, lemon juice, garlic and seasoning in a bowl and whisk together to make the dressing.
Combine the remaining ingredients in a salad bowl, add the dressing to taste and toss to coat.
Serves 6 as a side salad
